Recipes for chicken are something that we tend make a lot, and I will admit to sometimes getting a little stale in my recipe
choices. I have a little "cheat sheet" of recipes from my husband's
family, and this is one of them.
I tend to forget about it and go for the
"quick and easy" recipes more often these days, as I imagine many of us do.
But you know, this particular recipe really isn't so difficult after all.
And oh boy is it ever tasty!If you can't handle all the butter in this
dish, you could try using some olive oil and/or chicken broth in its place,
although I haven't tried it that way. And although I like using key lime
juice, you can use regular lime juice too.This recipe serves 4, deliciously.
Baked Chicken a l'Espagnole 4 chicken breasts, skinned & deboned
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter
1 tablespoon key lime juice
1/4 teaspoon dill weed
8 scallions, green tops on, trimmed and sliced
6 oz. feta cheese, crumbled
3/4 cup sweet peppers cored, de-seeded and sliced thinly
